  • 1/2 cup raspberry jam
  • 2 cups heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream the butter and sugar in a large mixing bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Combine milk and sour cream in another bowl; then alternate adding the dry ingredients and milk mixture to the butter mixture.
  6. Fold in melted white chocolate until fully incorporated.
  7. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  8. Cool cakes in pans for 10 minutes before transferring them to wire racks to cool completely.
  9. For the filling, mash fresh raspberries and mix with raspberry jam.
  10. Whip cream with powdered sugar and vanilla until stiff peaks form.
  11. Assemble the cake by layering raspberry filling and whipped cream between the cooled cake layers, then top with remaining whipped cream and garnish with fresh raspberries.
