  • 1/2 cup corn and black bean salsa
  • 2 cups shredded cheese (Mexican blend or vegan)
  • 2 cups red enchilada sauce
  • Yellow or white corn tortilla shells

Instructions

  2. Cook the sweet potato in the microwave for about 10 minutes until tender. Peel and dice into cubes.
  3. In a bowl, mix the diced sweet potato, corn and black bean salsa, and 1 1/2 cups of cheese.
  4. Pour 1 cup of enchilada sauce into a baking dish. Fill each tortilla with the mixture, roll tightly, and place seam side down in the dish.
  5. Top with the remaining enchilada sauce and cheese.
  6. Bake for 20 minutes until bubbly and golden.
