  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 3 tablespoons cornstarch (for coating the tofu)
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press the tofu between clean kitchen towels for 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into cubes and coat with cornstarch.
  3. Heat oil in a large skillet over medium-high heat. Add tofu in a single layer and sauté until golden brown on each side.
  4. Remove tofu from the pan; add onions and bell peppers to sauté until caramelized.
  5. Stir in garlic and ginger for about 30 seconds.
  6. Add pineapple chunks and cook for another 2-3 minutes until caramelized.
  7. Mix soy sauce, rice vinegar, and maple syrup; pour over the mixture along with the crispy tofu. Stir gently until everything is well-coated.
