  • 2 large chicken breasts (boneless skinless, cut into 1-inch cubes)
  • 1 lb twisted pasta (fusilli or penne)
  • 3 tbsp unsalted butter
  • 45 cloves garlic (minced)
  • 1½ cups heavy cream
  • ½ cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Cook the pasta according to package instructions in salted water until al dente. Reserve half a cup of pasta water before draining.
  2. In a large skillet, melt 1 tbsp of butter over medium heat. Add the cubed chicken, season with salt and pepper, and cook for about 6-8 minutes until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt another tbsp of butter over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds). Stir in heavy cream and chicken broth.
  4. Reduce heat to low and mix in freshly grated Parmesan cheese and Italian seasoning. Adjust seasoning if necessary.
  5. Return the cooked chicken to the skillet along with drained pasta. Mix gently, adding reserved pasta water as needed for desired sauce consistency.
  6. Garnish with fresh parsley before serving.
