  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Cooked rice or noodles for serving

  1. Rinse the shrimp under cold water, pat dry, and season with salt and pepper.
  2. Prepare the vegetables by washing and cutting the asparagus, bell pepper, and snap peas; mince the garlic and ginger.
  3. Combine soy sauce, cornstarch, and water in a bowl; whisk until dissolved.
  4. Heat vegetable oil in a large skillet over medium-high heat; sauté garlic and ginger until fragrant.
  5. Add shrimp in a single layer; cook until pink (about 2-3 minutes each side). Remove from pan.
  6. Stir-fry asparagus and red bell pepper for about 2-3 minutes; add snap peas and cook for another couple of minutes.
  7. Return shrimp to the pan; pour sauce over everything and stir until well coated.
  8. Cook an additional 1-2 minutes until sauce thickens; serve hot over cooked rice or noodles.
