  • 1 cup unsweetened shredded coconut (divided)
  • 2 tablespoons chocolate chips or dark chocolate pieces (divided)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon almond butter (optional)

Instructions

  1. Preheat your oven to 400°F. Spread shredded coconut on a baking sheet and toast for 5-10 minutes until golden brown.
  2. In a food processor, combine pitted dates, almond butter (if using), 2/3 cup toasted coconut, 1 tablespoon chocolate chips, sea salt, and vanilla extract. Process until it forms a dough ball.
  3. Roll the mixture into about 16 bite-sized balls, incorporating the remaining chocolate chips as you go.
  4. Roll each ball in the remaining toasted coconut to coat evenly.
  5. Store in an airtight container in the fridge for up to 1-2 weeks or freeze for longer storage.
