  • 8 oz block of feta cheese (around 220 grams), drained
  • 1/4 cup plain Greek yogurt
  • 1 cup canned pumpkin puree (unsweetened)
  • 12 Tbsp honey
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Black pepper to taste
  • Fresh thyme and chopped walnuts for garnishing

Instructions

  1. In a food processor, combine the feta cheese and Greek yogurt. Blend until smooth, scraping down the sides as needed.
  2. Add the pumpkin puree, honey, thyme, and black pepper. Blend again until well combined.
  3. Transfer the mixture to the fridge and chill for 30-60 minutes to enhance flavors.
  4. When ready to serve, scoop into a bowl, garnish with walnuts and fresh thyme, drizzle with honey, and add more cracked pepper if desired.
  5. Enjoy with toasted bread or crackers!
