  • 1/2 cup butter (room temperature)
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1/2 cup cold butter, cubed (1 stick)
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F and grease a 9 x 13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, salt, and spices.
  3. In an electric mixer bowl, beat butter and pumpkin puree until mixed. Add sugar, then eggs and vanilla.
  4. Gradually combine dry ingredients with the wet mixture while alternating with milk until smooth.
  5. For the crumb topping, mix cold butter, brown sugar, flour, and spices until crumbs form.
  6. Layer half of the batter in the greased dish, sprinkle half of the crumb topping, add remaining batter and finish with crumbs.
  7. Bake for 45-55 minutes or until a toothpick comes out clean.
