  • 6 8-inch Tortillas
  • 1/2 cup Granulated Sugar
  • 1 tsp Ground Cinnamon
  • 1/3 cup Butter (melted)
  • 4 oz Cream Cheese (softened)
  • 1/4 cup Powdered Sugar
  • 3/4 cup Canned Pumpkin Puree
  • 1/2 tsp Pure Vanilla Extract
  • 1 1/2 tsp Pumpkin Pie Spice
  • 1/2 cup Heavy Whipping Cream
  • 2 Tablespoons Powdered Sugar
  • 1/2 teaspoon Vanilla Extract
  • Chopped Pecans for garnish

Instructions

  1. Preheat your oven to 400°F.
  2. Cut tortillas into rounds and stab with a fork to prevent air bubbles. Brush with melted butter and coat in cinnamon sugar.
  3. Place tortilla rounds over an upside-down muffin tin and bake for about 10 minutes until golden brown. Allow to cool.
  4. In a bowl, beat together cream cheese and powdered sugar until smooth; add pumpkin puree, vanilla extract, and pumpkin pie spice.
  5. Whip heavy cream with powdered sugar until stiff peaks form.
  6. Pipe or spoon pumpkin filling into taco shells, top with whipped cream and garnish as desired.
