  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1 can (20 oz) pineapple slices, drained and cut into small pieces
  • Maraschino cherries, halved
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a bowl, mix melted butter and brown sugar; spoon into each muffin cup.
  3. Add pineapple pieces and half cherries on top of the mixture.
  4. Cream softened butter and granulated sugar in a large bowl until fluffy; add egg and vanilla.
  5. In another bowl, combine flour, baking powder, and salt; gradually mix into wet ingredients until just combined.
  6. Spoon cookie dough over the fruit topping in muffin cups; flatten gently.
  7. Bake for 12-15 minutes or until golden edges appear.
  8. Cool for 5 minutes in the tin before transferring to a cooling rack.
