  • 1 large cucumber, peeled and sliced
  • 1/2 red onion, finely sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 1 small jalapeño, seeded and minced (optional)

Instructions

  1. In a large bowl, combine the diced pineapple, sliced cucumber, and red onion.
  2. In a small bowl, whisk together lime juice, olive oil, and honey until well combined.
  3. Pour the dressing over the salad mixture and toss gently to coat.
  4. Add cilantro along with salt and pepper; toss again for even distribution.
  5. If desired, incorporate minced jalapeño for extra heat.
  6. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
  7. Serve chilled with additional cilantro as garnish if desired.
