  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1½ cups long-grain white rice
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken pieces along with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for 5–6 minutes until chicken is mostly cooked.
  2. Stir in uncooked rice and Rotel (do not drain). Cook for an additional 1–2 minutes to toast the rice.
  3. Pour in chicken broth and bring to a boil. Reduce heat to low, cover the pot, and let simmer for about 20–25 minutes until rice is tender.
  4. Once cooked, stir in nacho cheese sauce and 1 cup shredded cheese until melted and creamy.
  5. Turn off the heat, sprinkle remaining cheese on top, cover for another 5 minutes to melt. Garnish with desired toppings before serving.
