  • 3 pounds boneless, skinless chicken thighs
  • 1 cup orange juice
  • 2 tablespoons soy sauce
  • 1/2 cup white sugar
  • 1 tablespoon rice vinegar
  • 1 large bell pepper, chopped
  • 1/2 small onion, chopped
  • 1/2 medium orange, thinly sliced with seeds removed
  • Salt and pepper to taste
  • 1/2 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 12 tablespoons avocado oil

Instructions

  1. Cut chicken thighs into bite-sized pieces and season with salt and pepper.
  2. Preheat your Blackstone griddle over medium heat and add avocado oil.
  3. Sauté chopped bell pepper and onion for about 3-4 minutes until softened.
  4. Add seasoned chicken to the griddle, cooking until golden brown (about 6-8 minutes).
  5. In a bowl, mix together orange juice, soy sauce, sugar, rice vinegar, minced ginger, garlic, and red pepper flakes.
  6. Pour the sauce over the chicken and veggies on the griddle; simmer for about 5-7 minutes until slightly thickened.
