Ingredients

  • Gnocchi (optional)
  • Olive or avocado oil
  • Spicy Italian sausage (or turkey/plant-based sausage)
  • Leeks
  • Fennel bulb
  • Parsnip
  • Carrot
  • Celery
  • Garlic
  • Whole tomatoes
  • Navy beans
  • Chicken stock/broth
  • Kale
  • Lemon juice

Instructions

  1. If using gnocchi, cook according to package instructions and set aside.
  2. In a large pot, heat oil over medium-high heat and brown the crumbled spicy sausage until cooked through.
  3. Add sliced leeks, fennel, parsnip, carrot, and celery. Season with salt and pepper; sauté until tender.
  4. Stir in garlic and chopped tomatoes; add navy beans and chicken broth. Bring to a simmer.
  5. Cover the pot and let it simmer for about 20 minutes until the vegetables are tender. Stir in kale and lemon juice before serving.
  6. Serve hot with cooked gnocchi added to each bowl.
