  • 8 chicken thighs (or preferred cuts)
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper; mix well.
  3. Season the chicken pieces with the dry rub and set aside.
  4. Heat a large oven-safe sauté pan over medium heat. Sear the chicken until browned on both sides; remove from pan.
  5. Sauté chopped cabbage for 2-3 minutes in the same pan until slightly wilted.
  6. Add sliced potatoes and onions to the pan along with chicken stock; stir to combine.
  7. Return seared chicken to the pan on top of the vegetables.
  8. Bake in preheated oven for about 45–50 minutes or until chicken reaches an internal temperature of 165°F (75°C).
