  • 1 cup peaches, finely diced
  • 1/2 cup milk
  • For the frosting: 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream together butter, sugar, and honey in another bowl until light and fluffy.
  4. Beat in eggs one at a time along with vanilla extract.
  5. Gradually add dry ingredients and milk alternately to the butter mixture until combined.
  6. Fold in finely diced peaches.
  7. Fill cupcake liners two-thirds full with batter.
  8. Bake for about 18–22 minutes or until a toothpick comes out clean.
  9. Allow cooling completely before frosting.
  10. For frosting, beat together cream cheese and butter until smooth; mix in honey and vanilla then gradually add powdered sugar until fluffy.
