  • 1 lb ground beef or ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/3 cup honey
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/2 cup diced bell peppers
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C) and grease your baking dish.
  2. In a bowl, mix ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil (if using), black pepper, and salt until just combined. Form small meatballs.
  3. In a saucepan over medium heat, combine honey, soy sauce, ketchup, water, and minced garlic until bubbling.
  4. Spread uncooked rice in the baking dish; layer with bell peppers and frozen peas. Pour in chicken broth.
  5. Place meatballs on top of the rice mixture and drizzle with honey garlic sauce.
  6. Cover with foil and bake for 40 minutes; remove foil and bake an additional 10–15 minutes until golden.
