  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a mixing bowl, combine 1 cup flour, 1/4 cup granulated sugar, and 1/4 teaspoon salt. Cut in 1/2 cup cold cubed butter until crumbly. Press into the prepared pan and bake for 15–18 minutes until lightly golden.
  3. In another bowl, toss together 3–4 sliced peaches, 1/2 cup sugar, 2 tablespoons flour, 1 tablespoon lemon juice, and 1/2 teaspoon vanilla extract.
  4. For the crumb topping, mix 1/2 cup flour, 1/4 cup granulated sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, and 1/4 teaspoon salt with 1/4 cup melted butter until crumbly.
  5. Spread the peach filling over the baked crust and sprinkle the crumb topping evenly on top.
  6. Bake for an additional 45–50 minutes until golden brown and bubbly. Allow cooling completely before slicing.
