  • 1 tbsp butter
  • 1 leek
  • 2 carrots (large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey
  • 2 large potatoes (cut into pieces)
  • 2 bay leaves
  • 1 tbsp fresh thyme or 1 tsp dried thyme
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, melt butter over medium heat and sauté sliced leeks, carrots, celery, and thyme for about 5 minutes until softened. Add pressed garlic and cook until fragrant.
  2. Stir in flour until well combined. Gradually add chicken stock while scraping any bits off the bottom of the pot.
  3. Add potatoes, cooked turkey, and bay leaves. Season with salt and pepper.
  4. Cover the pot and place in a preheated oven at 350°F for about 45 minutes until everything is tender.
  5. Stir well before serving; garnish with fresh parsley.
