  • 4 large eggs
  • 4 tbsp sweetener (erythritol, monk fruit sweetener, honey, or maple syrup)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch (or coconut flour)
  • 1 1/2 cups mixed berries (fresh or frozen – blueberries, raspberries, cherries)
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  2. Blend cottage cheese until smooth and creamy.
  3. Add eggs, sweetener, vanilla extract, cornstarch (or coconut flour), and lemon zest; blend until well combined.
  4. Pour the mixture into the prepared baking dish.
