  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper

  • 1/4 cup soy sauce (or coconut aminos for a gluten-free option)
  • 1/4 cup pineapple juice
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 cup cooked jasmine rice
  • 1/2 cup diced fresh pineapple
  • 1/4 cup red bell pepper, thinly sliced
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup chopped green onions (for garnish)
  • 1/4 cup toasted coconut flakes (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. Cook jasmine rice according to package instructions.
  2. In a small bowl, mix garlic powder, onion powder, paprika, black pepper, and salt. Rub the mixture over the chicken breasts.
  3. Heat olive oil in a skillet over medium heat. Sear chicken for about 6-7 minutes on each side until golden brown and fully cooked (165°F internal temperature).
  4. In another bowl, whisk together soy sauce, pineapple juice, honey, rice vinegar, and grated ginger. Pour into the skillet after removing the chicken and simmer for 3-4 minutes.
  5. Slice the cooked chicken and assemble bowls with rice as the base, topped with chicken, fresh pineapple, bell pepper slices, cucumber ribbons, and drizzled with sauce.
