  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 2 large sweet potatoes (about 1.5 lbs)
  • 1 cup cooked quinoa or brown rice (optional)
  • 2 tablespoons olive oil
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 cups mixed greens or spinach
  • 1/4 avocado, sliced or diced

Instructions

  1. Marinate chicken with olive oil, lemon juice, Dijon mustard, minced garlic, oregano, smoked paprika, salt, and pepper for at least 30 minutes.
  2. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, smoked paprika, garlic powder, and salt; roast on a baking sheet for about 25-30 minutes until crispy.
  3. Grill marinated chicken over medium-high heat for about 6-7 minutes per side until cooked through.
  4. Assemble bowls starting with quinoa or rice as the base (if using), followed by roasted sweet potatoes and sliced grilled chicken; top with mixed greens and avocado.
  5. Drizzle with tahini sauce before serving.
