  • 2.5 lbs yellow or Yukon gold potatoes
  • 2 cups chicken broth (or vegetable broth)
  • ½ cup olive oil
  • ½ cup lemon juice
  • 5 cloves garlic (minced)
  • 1 tbsp dried oregano
  • ½ tbsp paprika
  • 1 tbsp salt

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and cut the potatoes into thick wedges or cubes.
  3. In a roasting pan, combine the potatoes with chicken broth, olive oil, lemon juice, minced garlic, oregano, paprika, and salt. Toss well to coat.
