  • ¾ Cup Sugar
  • 1 Cup Brown Sugar
  • 1 Cup Pureed Pumpkin
  • 1 Cup Dairy Free Milk (such as coconut)
  • 2 Cups GF All Purpose Flour
  • 3 tsp Baking Powder
  • 2 Cups Powdered Sugar (for glaze)
  • ½ tsp Cinnamon (for glaze)
  • ½ tsp Maple Extract
  • ½ TBSP Coconut Milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs, sugars, vanilla, pumpkin puree, and dairy-free milk until smooth.
  3. In another bowl, mix GF flour, baking powder, xanthan gum, pumpkin pie spice, salt, cinnamon, and nutmeg.
  4. Gradually combine the dry ingredients with the wet mixture without overmixing.
  5. Fill a greased donut pan halfway with batter and bake for about 20 minutes or until golden brown.
  6. Prepare the maple glaze by whisking powdered sugar, vanilla extract, cinnamon, maple extract, and coconut milk until smooth.
  7. Once cooled slightly, dip each donut into the glaze or drizzle on top.
