  • 1 lb ground beef (or half beef and half turkey)
  • 1 large egg
  • ½ cup breadcrumbs
  • 4 tbsp unsalted butter
  • 12 oz linguine
  • ¾ cup heavy cream
  • 5 cloves garlic, minced
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix ground beef, egg, breadcrumbs, Parmesan cheese, parsley, garlic, salt, and pepper until just combined. Form into 1-inch meatballs.
  2. Sear meatballs in olive oil over medium heat until golden brown on all sides; set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Stir in lemon juice and return meatballs to the pan.
  4. Cook linguine according to package directions; reserve pasta water.
  5. In another saucepan, melt butter, add heavy cream, and stir in Parmesan until smooth. Adjust with reserved pasta water as needed.
  6. Serve meatballs over linguine with extra garlic butter sauce.
