  • 1 pound baby potatoes (halved)
  • 4 tablespoons unsalted butter (melted)
  • 3 cloves garlic (minced)
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt (or to taste)
  • 0.25 teaspoon black pepper
  • 0.25 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. Prepare all ingredients by cutting the beef and halving the baby potatoes.
  2. In a skillet, heat olive oil over medium-high heat and sear the beef bites until browned on all sides.
  3. In a bowl, mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper to create the garlic butter sauce.
  4. In your slow cooker, layer halved potatoes and seared beef. Pour the garlic butter sauce over them and add beef broth.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours until beef is fork-tender.
  6. Let rest for about 10 minutes before serving.
