1 (15 oz) can chickpeas, drained & rinsed
½ cup feta cheese, crumbled
⅓ cup dried cranberries
¼ cup red onion, finely chopped
¼ cup fresh parsley, chopped
¼ cup extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
Instructions
In a large bowl, combine chickpeas, crumbled feta, dried cranberries, red onion, and parsley.
In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey (or maple syrup), garlic, salt, and black pepper until well blended.
Pour the vinaigrette over the chickpea mixture and toss until evenly coated.
