  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Combine all ingredients—chicken breasts, chicken broth, coconut milk, red curry paste, onion, garlic, and red bell pepper—in a slow cooker.
  2. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
