Ingredients

Scale
  • 2 1/4 teaspoons instant yeast
  • 1 cup warm water (110°F/43°C)
  • 1 tablespoon honey
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh rosemary (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon flaky sea salt

Instructions

  1. In a large mixing bowl, dissolve the yeast and honey in warm water. Let it sit for about 5 minutes until foamy.
  2. Add the flour, salt, and olive oil to the yeast mixture. Stir until you form a sticky dough.
  3. Cover the bowl with a kitchen towel and let it rise in a warm place for 45–60 minutes until doubled in size.
  4. Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with olive oil.
  5. Once risen, spoon the dough into the greased muffin cups, filling them about three-quarters full.
  6. Drizzle olive oil over each muffin top and sprinkle generously with chopped rosemary, minced garlic, and flaky sea salt.
  7. Bake for 18–20 minutes until golden brown on top and crisp at the edges.
  8. Allow to cool slightly before transferring to a wire rack.
