  • 5 ½ oz white chocolate
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • 3 ½ oz kataifi pastry
  • 9 oz milk chocolate
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. Prepare the kataifi pastry by mixing flour, cornstarch, sugar, and salt. Add vegetable oil and water to form a smooth batter. Let it rest for 30 minutes.
  2. In a non-stick pan over medium-low heat, pipe long strands of batter to cook until set but pale. Remove carefully and cover to keep soft.
  3. For the filling, melt white chocolate with double cream until smooth. Blend ground pistachios into a paste and mix into the melted chocolate.
  4. Toast kataifi pastry in butter until golden and combine it with the pistachio cream mixture. Chill until firm.
  5. Roll the mixture into bite-sized balls.
  6. Melt milk chocolate and coat each ball before letting excess drip off. Chill until set.
