  • 2 lbs fresh tomatoes (Roma or vine-ripened), halved
  • 1 whole head of garlic
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 2 cups vegetable or chicken broth
  • ½ cup heavy cream (or coconut milk for dairy-free option)
  • ¼ cup fresh basil leaves
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Arrange halved tomatoes on a baking sheet and drizzle with olive oil. Wrap the whole head of garlic in foil and place on the sheet.
  2. Roast tomatoes and garlic for about 30 minutes until caramelized.
  3. In a large pot, heat olive oil over medium heat. Sauté chopped onions until soft.
  4. Squeeze roasted garlic cloves into the pot, add roasted tomatoes, broth, and basil. Stir to combine.
  5. Blend the mixture with an immersion blender until smooth.
  6. Return to heat and stir in heavy cream (or coconut milk). Simmer for an additional 5-10 minutes before serving.
