  • 8 ounces rigatoni pasta
  • 3 tablespoons butter
  • 1/2 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup Parmesan cheese (freshly grated)

Instructions

  1. Cook the rigatoni pasta according to package directions until al dente. Drain and set aside.
  2. In a skillet over medium heat, melt the butter. Sauté diced onion and optional red pepper flakes for about 5 minutes until translucent. Add garlic and sauté for another minute.
  3. Stir in pumpkin puree and cook for an additional minute. Then add heavy whipping cream, salt, black pepper, sage, nutmeg, and brown sugar. Simmer for 2-3 minutes.
  4. Mix in freshly grated Parmesan cheese until melted and smooth.
  5. Toss cooked pasta into the sauce until evenly coated. Serve hot with extra Parmesan on top.
