  • 1 avocado, diced
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Cook the orzo pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. In a large bowl, combine black beans, cherry tomatoes, corn, red bell pepper, and red onion; toss gently.
  3. Add cooled orzo to the vegetable mixture and stir until well combined.
  4. In a separate bowl, whisk together lime juice, olive oil, ground cumin, salt, and pepper.
