  • 2 lbs ribeye or sirloin steak
  • Slider buns or mini brioche rolls
  • ½ cup unsalted butter
  • 2 cloves garlic
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Dijon mustard
  • ½ tsp red pepper flakes
  • 1 tsp lemon juice
  • ½ tsp paprika

Instructions

  1. Make the cowboy butter by mixing melted butter with minced garlic, parsley, Dijon mustard, red pepper flakes, lemon juice, paprika, salt, and pepper. Set aside.
  2. Pat the steak dry and season both sides with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat; sear the steak for about 3–4 minutes on each side for medium-rare. Let rest for 5–10 minutes.
  4. Toast slider buns cut side down in the skillet until golden brown.
  5. Slice the steak thinly and layer on toasted buns. Spoon cowboy butter over the steak and add desired toppings before placing the top bun.
