  • 1 cup sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 cup sour cream
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • 4 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 12 tbsp milk (optional, to thin if needed)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into a greased springform pan.
  2. In another bowl, combine softened butter, brown sugar, and cinnamon. Spread over the crust.
  3. Beat softened cream cheese and sugar until creamy. Add eggs one at a time, then vanilla and sour cream. Mix in brown sugar and cinnamon.
  4. Pour filling over the cinnamon layer and swirl for visual appeal.
  5. Bake for about 55 minutes until slightly jiggly in the center. Cool gradually before chilling in the refrigerator for at least four hours or overnight.
  6. For frosting, beat together cream cheese and butter; add powdered sugar and vanilla extract. Spread over chilled cheesecake before serving.
