  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1/4 teaspoon black pepper
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream (or plant-based cream)
  • 1/4 cup grated Parmesan cheese (plus more for serving)
  • 1 lb penne pasta
  • Pinch of nutmeg (optional)

Instructions

  1. Cook penne pasta according to package directions until al dente. Drain and set aside some pasta water.
  2. In a large skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper; cook until browned and cooked through. Remove from skillet.
  3. In the same skillet, add chopped onions; sauté until softened (about 5 minutes). Add garlic; cook for another minute.
  4. Stir in thawed spinach; cook for 1-2 minutes until heated.
  5. Pour in chicken broth and heavy cream; bring to a gentle simmer.
  6. Stir in Parmesan cheese and optional nutmeg, then return cooked chicken and penne to the skillet. Toss until coated in sauce—add reserved pasta water if needed.
  7. Serve immediately with additional cheese on top.
