  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, add olive oil and season chicken with salt, pepper, and dried thyme. Sear for about 5-6 minutes per side until golden brown.
  3. Add minced garlic to the skillet; sauté until fragrant. Then add mushrooms and cook for about five minutes. Stir in spinach until wilted.
  4. Pour in heavy cream and chicken broth; stir well and simmer for about 3-4 minutes until slightly thickened.
  5. Place seared chicken in the baking dish and pour the vegetable mixture over it. Sprinkle with mozzarella and Parmesan cheese.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
  7. Garnish with fresh parsley if desired before serving.
