  • 1 ¾ cups heavy cream
  • 1 cup mascarpone cheese (room temperature)
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed coffee (cooled)
  • 1 package (about 7 oz) ladyfinger cookies
  • 1 ½ cups cherry preserves or cherry pie filling
  • ½ cup fresh cherries, pitted and halved
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. In a large bowl, whip heavy cream until soft peaks form. Gently fold in mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  2. In another bowl, mix cooled coffee with almond extract for added flavor.
  3. Quickly dip each ladyfinger into the coffee mixture and layer them at the bottom of a dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry preserves and fresh cherries.
  5. Repeat layers with remaining ingredients.
  6. Cover and chill in the refrigerator for at least six hours or overnight.
  7. Before serving, dust with cocoa powder and garnish with additional cherries.
