  • 1 (20 ounce) package refrigerated cheese tortellini
  • 1 tablespoon fresh sage (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Cook the tortellini according to package instructions in boiling water until al dente. Drain and set aside.
  2. While the tortellini cooks, chop the mushrooms and sage.
  3. In a skillet over medium-high heat, combine 1 tablespoon of butter and olive oil. Add chopped sage and cook until crisp, about 1 minute. Remove from skillet.
  4. In the same skillet, add remaining butter, mushrooms, and minced garlic; sauté until mushrooms are browned and fragrant, about 5 minutes.
  5. Combine the cooked tortellini with the mushroom mixture, adding parmesan cheese and crispy sage. Toss well to coat and season with salt and pepper before serving.
