  • 2 boneless, skinless chicken breasts
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Optional: Extra basil leaves and balsamic glaze for garnish
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. In a skillet over medium heat, warm olive oil and cook the chicken for 5-7 minutes per side until golden brown and cooked through. Let rest before slicing.
  4. In a bowl, mix diced cherry tomatoes, minced garlic, basil, balsamic vinegar, olive oil, and salt.
  5. Toss the cooked pasta in the skillet with the chicken drippings for added flavor. Slice the rested chicken and place it on top of the pasta before adding the bruschetta topping.
  6. Serve warm with freshly grated Parmesan cheese and optional garnishes.
