  • ¾ cup peach preserves
  • ¼ cup peach juice
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon coarse ground mustard
  • 2 teaspoons garlic, minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 4 salmon fillets, about pounds, skins on
  • 1 tablespoon extra virgin olive oil
  • 2 medium peaches, pitted and thinly sliced
  • Parsley for garnish

Instructions

  1. In a medium bowl, mix together peach preserves, peach juice, olive oil, soy sauce, apple cider vinegar, garlic, salt, black pepper, and red pepper flakes. Reserve half of this marinade.
  2. Place the salmon fillets in a resealable bag and pour in the remaining marinade. Seal and marinate for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. Heat an oven-safe skillet over medium-high heat with olive oil. Sear the marinated salmon skin-side up until golden brown.
  5. Flip the salmon skin-side down and add sliced peaches around it. Cook for a few more minutes.
  6. Pour reserved marinade over the salmon and peaches before transferring to the oven.
  7. Bake for 12-15 minutes until salmon reaches an internal temperature of 145°F (63°C). Serve immediately.
