  • 2 cups whole milk for pastry cream
  • ½ cup granulated sugar for pastry cream
  • 4 large egg yolks for pastry cream
  • ¼ cup cornstarch for pastry cream
  • 2 teaspoons vanilla extract for pastry cream
  • 2 tablespoons unsalted butter for pastry cream
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a mixing bowl, combine flour, sugar, instant yeast, and salt.
  2. In another bowl, whisk together warm milk, eggs, and melted butter; then combine with dry ingredients to form a soft dough.
  3. Knead the dough for about 5-7 minutes until smooth and elastic. Let it rise in a greased bowl until doubled in size (about an hour).
  4. Meanwhile, prepare the pastry cream by heating milk and sugar in a saucepan. Whisk egg yolks with cornstarch; temper with warm milk mixture before returning to heat until thickened.
  5. Roll out risen dough to about ½ inch thick and cut into circles; let them rise again for about 30 minutes.
  6. Heat vegetable oil and fry dough circles until golden brown on each side (2-3 minutes).
  7. Fill cooled bomboloni with pastry cream using a piping bag and dust with powdered sugar before serving.
