  • 1 lb turkey sausage, sliced
  • 1 lb cheese tortellini (fresh or frozen)
  • 2 cups bell peppers, diced
  • 1 cup red onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your Blackstone grill to medium-high heat for about 5 minutes.
  2. Boil salted water in a pot and cook the tortellini according to package instructions (about 3-5 minutes). Drain and set aside.
  3. In a mixing bowl, combine bell peppers, red onion, garlic, olive oil, Italian seasoning, smoked paprika, salt, and pepper. Toss well.
  4. Grill sliced turkey sausage for about 3-4 minutes until browned.
  5. Move sausage to one side of the grill; add seasoned vegetables on the other side. Grill together for 5-7 minutes until vegetables are tender.
  6. Add drained tortellini to the grill and gently toss everything together for about 2-3 minutes until heated through.
  7. Taste and adjust seasoning if needed before serving.
  8. Garnish with fresh parsley and serve immediately.
