  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2/3 cup mashed ripe banana (about 2 medium)
  • 1/2 cup sour cream
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 teaspoon cinnamon
  • 3/4 cup graham cracker crumbs
  • 2/3 cup whole milk
  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallow bits, divided

Instructions

  1. Preheat your oven to 400°F.
  2. In a mixing bowl, combine melted butter and brown sugar until smooth. Add egg, vanilla extract, mashed bananas, and sour cream; mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
  4. Gradually add the dry mixture into the wet mixture alternating with milk until just combined.
  5. Fold in three-quarters of the chocolate chips and vegan marshmallows.
  6. Fill muffin liners two-thirds full and top with remaining chocolate chips and marshmallows.
  7. Bake for about 16 minutes or until golden brown; check doneness with a toothpick.
  8. Allow muffins to cool slightly before transferring them to a wire rack.
