  • 5 oz arugula
  • 1/4 cup thinly sliced red onion
  • 1/2 cup chopped figs
  • 1 cup pecan halves
  • 2 Tbsp maple syrup (for pecan topping)
  • 1/2 cup olive oil
  • 2 tsp maple syrup (for dressing)
  • 1 tsp lemon juice
  • 1 1/2 tsp Dijon mustard
  • 1/2 tsp pepper
  • 1 garlic clove (minced)
  • 3 Tbsp balsamic vinegar
  • 1/41/2 tsp sea salt (or to taste)

Instructions

  1. Preheat oven to 350°F. Toss pecans with maple syrup and sea salt; bake on a parchment-lined sheet for 5-7 minutes until fragrant.
  2. In a bowl, whisk together dressing ingredients: olive oil, maple syrup, lemon juice, Dijon mustard, garlic, balsamic vinegar, salt, and pepper.
